Organic – Maremma Toscana Sangiovese DOC

Made exclusively with Sangiovese (100%) grapes. Grape thinning takes place in July to keep the yield low: about one kg grapes per plant.

 The grapes are picked by hand and carefully selected directly in the vineyards. The grapes arrive in the cellar, transported in small cases, where they are pressed. Fermentation takes place in oak tanks (40/50 hl). The malolactic fermentation is done on April-May. The aging is in big oak cask, for a minimum of 18months, until the bottling. We do not filter the wine before bottling.

Characteristics: Taste of plums and red berries that develops gradually in the mouth. Very pleasant and fresh with fruity notes. Hint of liquorice.
